2018 Semillon Project Classic Semillon (from $25)

Semillon is the traditional white grape variety of the Barossa Valley. The first vines were planted back in the 1850s but this old vine material is steadily declining in favour of the more popular red varieties of the day. But we at Hayes Family Wines love Semillon. Grown in the Barossa, on the right soils in the right way, it can produce a wine full of character that drinks both well in its youth, and also with substantial bottle age.

The Hayes Family Wines Semillon Project was developed to help us experiment in the winery with the superb Ebenezer Semillon that we are fortunate to access. On the 1st of March 2018, we picked 3 tonne of old vine Barossa Semillon and processed separate batches in different vessels - the traditional or classic stainless, ceramic egg and oak matured.

The Classic Semillon was fermented in stainless steel before being bottled full of freshness in May 2018.

The Semillon is light straw tinged with green. Extraordinarily fresh and bright in its youth. Beautiful spring nose featuring lemon and lime. The wine is light, very clean and fresh. A classic Barossa style that is very versatile, it can be enjoyed now on release with fresh salads and seafood on a summers day, or left to age for 5, 10 or 15 years.

Technical Details: Alc 11.0%. 400 bottles filled.

Cellaring: 5 years plus

Serve: This wine will match well with a variety of seafood (see our recipe for Salmon de Croute here) and salad dishes in its youth before developing secondary characters after 3-4 years and providing a perfect match for more robust Fish, Chicken and Pork based dishes with age.
