Semillon is the traditional white grape variety of the Barossa Valley. The first vines were planted back in the 1850s but this old vine material is steadily declining in favour of the more popular red varieties of the day. But we at Hayes Family Wines love Semillon. Grown in the Barossa, on the right soils in the right way can produce a wine full of character that drinks both well in its youth, and also with substantial bottle age.

The Hayes Family Wines Semillon Project was developed to help us experiment in the winery with the superb Ebenezer Semillon that we are fortunate to access. On the 1st of March 2018, we picked 3 tonne of old vine Barossa Semillon and processed separate batches in different vessels, the traditional or classic stainless, ceramic egg and oak matured.

The Ceramic Egg Semillon was fermented in a 675l cermaic egg, left on skins for 4 months before being bottled in July 2018.

The Ceramic Egg matured Semillon is medium yellow having spent 4 months on skins. Still fresh, but carries a textural element that gives this wine a modern 'natural' twist.  A wine best enjoyed on release and for 2-3 years.
