Historically, there have been two main types of Vermouth: sweet and dry. Responding to demand and competition, Vermouth has evolved and added new styles, including extra-dry white, sweet white, red, amber, and rosé. At Hayes Family Wines, we make our Vermouth in the extra-dry-white style.

History

Vermouth is an aromatized fortified wine, flavoured with various botanicals (roots, barks, flowers, herbs and spices). The modern versions of the beverage were first produced in the mid to late 18th century in Italy. While Vermouth was traditionally used for medicinal purposes, it was later served as an aperitif. It has also become popular as a key ingredient for range of cocktails such as Martini, Manhattan and Negroni, many of the world’s favourite cocktails.

How do you make Vermouth?

Vermouth is produced by starting with a base of a neutral grape wine (we use Semillon). We then add additional alcohol (neutral spirit) and a proprietary mixture of dry ingredients. After the wine is aromatized and fortified, the Vermouth is often sweetened depending on the style (ours is not).

Consuming Vermouth

Vermouth is incredibly flexible, you can consume it as an aperitif (over ice, with soda), in a range of cocktails, in cooking, you name it. We love it to start the meal. Up the ante at your next dinner party and start with a cleansing and chilled Hayes Family Wines Vermouth!
