This past week I was fortunate to share the experience with two great friends, and we loved it. I chose to make a general kitchen knife and my friends both made their own carving knives.
Starting with recycled saw blades and a grinder we shaped and lightened the steel. We then attached a littler ‘chunk’ of wood (future handle), before we carved that into shape. Then some polishing and sharpening and we each had a knife. 6 hours of hard work. We loved every minute.
They are busy and only host small groups, but is an experience I will never forget. So book ahead, you will not be disappointed.

Australia have traditionally led the way with label validation, but perhaps not transparency. But things are changing. Mandatory recycling wording, barcodes, and energy information will soon be mandated on Australian Wine Labels. This is good for honest operators and could be a turning point for others.
