NV Sparkling Shiraz (Edition III)

When we purchased our property in Stone Well, the previous owners made us aware of some shiraz that they had made from the 2004 and 2005 vintages that was stored in an insulated, airconditioned shed. This was a surprise gain for us so the Sparkling Shiraz plan was born. We opened, checked and decanted roughly a pallet of 2004 and 2005 shiraz into a puncheon and a bit as our base wine, then we blended some 2017 shiraz. After leaving this for two years to integrate, we used traditional winemaking techniques to create our Sparkling Shiraz in a dry style with the addition of a little 2018 Hayes Family Wines Fortified Shiraz to add something special.

The NV Sparkling Shiraz (Edition III) was disgorged in October 2022. Like many of the best Sparkling Shiraz, it shows great complexity on release, a red wine first, a sparkling second, but despite the inherent age, it is a wine that will drink well for many years.

Edition III, the final release from our initial batch will be released in November 2022.

Technical Tasting Notes

NV Sparkling Shiraz (Edition III)

The 2022 Disgorgement of our NV Sparkling Shiraz is deep red, a red wine first, sparkling second. Very fresh for its age (much of the base wine is 15 years old), fresh, but drinking just beautifully on release. The very fine bead contributing much to the experience.

Production: 396 bottles disgorged.
Cellaring: Up to 10 years
Serve: This wine is a wonderful wine on its own, for breakfast with bacon and eggs, or over Christmas lunch with a variety of dishes. An incredibly flexible wine that can be enjoyed on almost any occasion.
